The IK-2 High Output Intermediate Tray Proofer is engineered to rest previously rounded dough pieces weighing up to 42.3 oz each, with a processing capacity of up to 3,200 pieces per hour. It features dual entry transporters for efficient loading, minimizing dough stress and improving yield. The proofer’s feeding system uses advanced photocell technology to ensure that no two dough balls are fed into a single basket.
The IK-2 offers flexible operation modes, allowing for continuous or step-by-step processing based on tray proofer size and specific needs. Its baskets are designed to resist moisture absorption and prevent dough from sticking. The proofer incorporates UV light to inhibit bacterial and mold growth, while its fan system effectively manages excess humidity. The open design facilitates easy monitoring of the dough, and various infeed and discharge configurations are available to accommodate diverse operational requirements.
